Mango Launji

INGREDIENTS

1 Tbsp canola oil 

¼ tsp cumin seeds 

¼ tsp carom seeds

¼ tsp mustard seeds

¼ tsp onion seeds

½ tsp fennel seeds

½ tsp hing 

¼ turmeric 

½ red pepper 

½ tsp black pepper 

¼ tsp fenugreek seeds (methi seeds)


4 ¼ cups of raw mango

1 tsp salt 

½ tsp black salt


1.5 cups jaggery, crushed 

1.5 Tbsp honey 


DIRECTIONS

  1. Add canola oil to medium fry pan

  2. Add cumin seeds through fenugreek seeds and stir

  3. Add mangos, peeled and diced to pan and stir on low heat for 3-4 minutes.

  4. Add salts, stir and cover for 10 minutes 

  5. Add jaggery and honey, stir and cover for another 10 minutes but stir occasionally 

  6. Let it cool completely before storing
